Beets are a nutritional powerhouse. They’re a great source of fibre, folate, manganese, potassium, iron, and vitamin C. Plus, we’ve added 2 tbsp of No Yolking™ 100 % Egg White Protein Powder per serving, which will not only keep you fueled for the day ahead, but will also help build and repair your muscles after an intense workout!

Makes: 4 servings

INGREDIENTS:

1 cup (250 mL) EACH apple juice and water (or all water)
1 cup (250 mL) dairy-free unsweetened almond or coconut milk
1 cup (250 mL) frozen blueberries
3 small cooked beets, halved
1 small apple, peeled and chopped
1/2 cup (125 mL)  No Yolking™ 100 % Egg White Protein Powder
2 tbsp (30 mL) minced ginger 
2 tbsp (30 mL) honey
2 tsp (10 mL) orange zest 
2 cups (500 mL) ice

INSTRUCTIONS:

  1. Place juice, water, milk, blueberries, beets, apple, protein powder, ginger, honey and orange zest in high-speed blender with ice. 
  2. Mix on low speed for 1 minute and then increase speed to high. Blend for 1 to 2 minutes or until very smooth. Divide into 4 glasses. Serve immediately. 

Tip: Look for fresh cooked beets in the produce section or canned in the vegetable aisle (be sure not to use pickled beets).
