Perfect for breakfast, brunch and even dinner, this basic recipe for French toast can be jazzed up in sweet or savory ways. Prepared with No Yolking™ Egg White Protein Bread and boosted with additional No Yolking™ 100 % Egg White Protein Powder in the custard, this version of French toast will keep you satisfied and energized.

INGREDIENTS:

1 cup (250 mL) unsweetened almond milk 
1/2 cup (125 mL)  No Yolking™ 100 % Egg White Protein Powder
2 whole eggs, beaten
1 tbsp (15 mL) Swerve or Lakanto Monkfruit Sweetener
1 tsp (5 mL) vanilla extract
1/2 tsp (2 mL) ground cinnamon 
1/2 tsp (2 mL) sea or kosher salt
8 slices No Yolking™ Egg White Protein Bread
1/4 cup (60 mL) coconut oil
Fresh berries or sautéed apples
Maple syrup or keto-friendly syrup
Whipped Coconut Protein Topping

INSTRUCTIONS:

  1. Whisk egg whites with milk until smooth. Add eggs, sweetener, vanilla, ground cinnamon and salt in shallow dish until smooth. Alternatively, mix in high-speed blender. 
  2. Heat 1 tbsp (15 mL) coconut in large skillet set over medium heat. One at a time, dip bread slices in egg mixture, until bread absorbs the mixture but isn’t soggy. 
  3. Cook, in batches, for 2 to 3 minutes per side or until golden brown on both sides, adding more coconut oil, as needed. Keep warm in low oven until all slices are cooked. Serve with fresh berries, syrup and/or a dollop of Whipped Coconut Protein Topping.
